- 1/4 cup of whole wheat flour
- 1 teaspoon of salt
- 2 large baking potatoes, peeled and thinly sliced
- 1 medium onion, peeled and chopped
- 2 tablespoons of butter
- 2 cups of buttermilk
- 1/4 teaspoon of ground black pepper
- 1/8 teaspoon of paprika
Preheat oven to 350°F.
In a small bowl combine flour and salt. Dredge potato slices in flour mixture, shaking off excess. Layer potatoes in a 2-quart casserole dish.
In a medium saucepan sauté onion in butter until tender, about 5 minutes. Add buttermilk to pan and heat; do not boil. Pour mixture over potatoes and sprinkle with pepper and paprika. Bake uncovered 1 hour or until potatoes are tender. Serve hot.
